Curing is one of the oldest cheeses in our country. Formerly a seasonal cheese that was made when finished the stage of lactation of sheep. Made from sheep's milk and a minimum of two months healing. Every week brushing and flip to take the bark personality. We can find rubbed with olive oil. Smooth bark and matured. Clean cut without holes. Toasted straw color which indicates the richness of sheep milk. Creamy texture. Taste pungent sheep, milky hues and roasted nuts.
